Mutter Muhl's Apple Cake

  Ingredients
Cakes
  • 3 eggs
  • 3 tablespoons (50 ml) sugar
  • 3 tablespoons (50 ml) flour
  • 1 teaspoon (5 ml) backing powder
  • 1 pinch of salt
  • 1 small tin pie apples
  • a bit of butter, cut into small cubes
     
Method
  1. Beat the eggs and sugar until smooth and creamy.
  2. Sieve together the flour, backing powder and salt, add to the egg mixture and mix.
  3. Drain the apples, cut into 2 cm cubes, add to the batter and and stir.
  4. Pour dough into a greased glass pie dish and dot with butter flakes.
  5. Place into oven at 200 °C, reduce temperature to 180 °C and bake for 30-45 minutes.
  6. Serve with whipped cream.
     
Serves 6-8

'Mutter Muhl' baked this apple cake for my mother, Irene, and her sister Herta when they visited her in Bergenhusen, Germany in 1962.
