Stuffed butternut

Ingredients

  • 4 small butternuts or 1 medium butternut
  • 1 recipe Gourmet green beans
  • 1/2 feta round (40g)
     

 

Method

  1. Preheat the oven to 200° C.
  2. If you are using 4 small butternuts, cut off the necks of the butternuts and reserve the flesh for use in another dish. Use the 4 bodies as cups to be filled. Remove the pips and boil or microwave until soft/cooked.
  3. If using 1 medium butternut, slice it lengthways and halve each section to make 4 portions. Hollow out the necks and remove the pips.
  4. Prepare gourmet green beans as described above, but crumble half of the feta onto the beans towards the end of the cooking process. Stir until the feta has just melted.
  5. Fill the butternut cups or quarters with the green bean mixture. Crumble the rest of the feta on top of the green bean mixture in the butternut cups.
  6. Bake in the oven until the cheese has melted.
  7. Serve with a main meal.
