   Snoekbisque

Soups

Ingredients

  • 350 g snoek, flaked
  • 30 ml butter
  • 30 ml oil
  • 1 onion, chopped
  • 250 g mushrooms, sliced
  • 50 ml flour
  • 500 ml milk
  • 500 ml fish or chicken stock (cubes)
  • 5 ml salt
  • freshly ground pepper to taste
  • 50 ml fresh parsley, chopped
  • lemon juice to taste
  • 250 ml cream

Method

  1. Sauté onions in butter and oil.
  2. Add mushrooms and fry for a few minutes.
  3. Sprinkle with flour, stir. Then add hot milk and stock and cook until smooth and thick.
  4. Add seasoning and parsley. Cook slowly for 5-8 minutes.
  5. Add fish and lemon juice and bring to boil.
  6. Add cream; do not boil again.
     

Serves 4-6
