Italian Pasta Salad 

Rice, Pasta & Potatoes

Ingredients

  • 250 g macaroni, cooked
  • 5 ml olive oil
  • 1 green pepper, chopped
  • 4 tomatoes, skinned and chopped
  • 200- 250 g salami, cubed
  • 1 onion, finely chopped
  • 15 olives, de-stoned and chopped

For the dressing:

  • 125 g blue cheese,
  • 45 ml olive oil
  • 45 ml mayonnaise or cream
  • 20 ml wine vinegar or balsamic vinegar
  • pepper to taste
  • 10 ml chopped parsley
  • 10 ml fresh basil
 

Method

 
  1. Place the cooked macaroni in a large bowl, add the olive oil, mix and stand to cool. Add all other ingredients and mix well.
  2. Place all ingredients for the sauce into a blender, blend, add to macaroni, mix well and cool for 30 minutes or longer.
     
  4 - 6 Portions
