Potato bake

Rice, Pasta &

Ingredients

  • 1 kg potatoes
  • 1 packet mushroom soup powder
  • 100-125 g butter
  • 250 g mushrooms (optional)
     

Method

  1. Peel the potatoes and slice - the slices should be fairly thick.
  2. Melt the butter, add the mushroom soup powder and mix well.
  3. Slice, then fry mushrooms in a pan until done.
  4. Coat the potato slices with the mushroom mixture and layer in a ovenproof casserole. If fresh mushrooms are used alternate with a layer of mushrooms.
  5. Bake at 180° C for 60 minutes or until potatoes are done.
 

Serves 4-6

Variation: use onion soup powder and fried onions instead of mushrooms.
