Hartshorn

Hirschhornsalz ist ein Backtriebmittel und besteht aus etwa 2 Teilen Ammoniumhydrogencarbonat NH4HCO3 und 1 Teil Ammoniumcarbonat (NH4)2CO3 (1 Teil) und etwas Ammoniumcarbamat NH4CO2NH2.

Hirschhornsalz zerfällt bei Temperaturen über 60°C in Kohlendioxid, Ammoniak und Wasser.

"Ammoniumhydrogencarbonat" is known in English as ammonium carbonate or carbonate of ammonia. It is also called 'Baker’s ammonia'.

Mehl mit Back-pulverzusatz self-rising flour Self-rising flour is a mixture of flour and a raising agent (sometimes salt is added too).
To make your own: add 10 ml of baking soda and 20 ml of cream of tartar to 500 g of flour; or
add 5 ml baking powder to each 100 g of flour.
Muskat nutmeg Nutmeg and mace are derived from the same evergreen tree, Myristica fragrans. Nutmeg is the seed of the tree, while mace is the dried covering of the seed.
