Portuguese Chicken Giblets

Ingredients

  • 1 kg chicken giblets (or livers), diced
  • 20 ml olive oil
  • 2 ml ground cumin
  • 1 ml ground cloves
  • 5 ml paprika
  • 1 bay leaf
  • salt and pepper to taste
  • piri-piri,whole or ground to taste (careful!)
  • 2 onions, chopped
  • 2 cloves garlic, crushed
  • 100 ml white wine

Method

  1. Fry the giblets and/or livers in the olive oil until brown.
  2. Add the spices and seasonings and stir well.
  3. Add the chopped onion and garlic and fry for 5 minutes.
  4. Add wine and simmer gently until cooked, about 1 hour.
    If you are cooking giblets only, add a little water or more wine if necessary.
  5. Serve hot with fresh rolls or bread or rice.
