Ceasar Salad with Chicken

Chicken

Ingredients
 

Salad Salad Dressing
  • 4 boneless chicken breasts
  • Butter or oil
  • 1 medium head of lettuce, shredded into bitesized pieces
  • 2 hardboiled eggs, quartered
  • 1 ripe avocado **
  • A handfull of small plum tomatoes **
  • 125 g bacon bits
  • Parmesan cheese
  • ± 300 ml of croutons

  • 125 ml olive oil
  • 2 ml Worcestershire sauce
  • 10 ml lemon juice
  • 2 cloves garlic, crushed
  • 1 egg
  • 5 ml Dijon mustard
  • Freshly ground black pepper

Place all the ingredients into a blender and mix.

Method

 

Salad

  1. Brush the chicken breasts with oil or butter and grill until done; then cut the meat into 1 cm wide strips and set aside.
  2. In a large bowl mix the letuce, avocado and tomatoes with the croutons and dressing. Arrange the chicken strips on top, decorate with the egg quarters and sprinkle with Parmesan cheese.

Croutons

  • 1 loaf of bread, white or wholemeal (wholemeal has a lower GI)
  • Butter or olive oil
  • Herbs and/or spices (garlic, onion, chili, oregano, ...)
  1. Pre-heat the oven to 150° C.
  2. Slice the bread.
  3. Mix your favorite herbs and/or spices with the melted butter or the olive oil.
  4. Lightly brush both sides of the bread with the flavoured oil. Trim the crusts and cut into small cubes.
  5. Spread cubes on large baking sheet and bake until golden brown, stirring them occasionally.
  6. Cool and store in an airtight container.
