Chocolate Mousse, diabetic

Ingredients

 
  • 50 g dark diabetic chocolate
  • 1 egg, separated
  • 5 ml fructose
  • 15 ml cream
  • pinch of cream of tartar
 

Method

 
  1. Break the chocolate into pieces and melt it in a water bath.
  2. Beat the egg yolk with the fructose until light yellow and creamy
  3. Mix egg yolk and chocolate and stand to cool.
  4. Add cream to chocolate mixture.
  5. Beat egg white with cream of tartar until stiff and fold into chocolate.
  6. Pour mousse into dessert bowl and refrigerate for a few hours.
  Makes 2 small or 1 generous portion.
