 Avocado and Grapefruit salad

Diabetic

Ingredients

 
  • 1 red grapefruit - chilled
  • 1 ripe avocado - chilled
  • 5 ml fructose (optional)
  • 50 g slivered almonds or chopped pecan nuts
  • a pinch of salt and
  • a dash of freshly ground black pepper
  • 5 ml chopped fresh parsley
  • 5-10 ml olive oil
 

Method

  1. Peel the grapefruit removing all the pith below. Carefully cut the grapefruit sections out of the membranes.
  2. Place into a salad bowl, and sprinkle with the fructose.
  3. Peel the avocado, remove the pit and cut it into lengthwise slices.
  4. Add to the grapefruit sections.
  5. Add the nuts, chopped parsley, salt and pepper.
  6. Drizzle with olive oil, mix and chill.
  7. Garnish with parsley and serve.

Serves 2.
