Chocolate Mousse II

Ingredients

 
  • 150 g dark chocolate ( I prefer Nestle's Albany)
  • 3 eggs, separated
  • 15 ml sugar
  • 45 ml cream
  • pinch of cream of tartar 
 

Method

 
  1. Break the chocolate into pieces and melt it in a water bath.
  2. Beat the egg yolk with the sugar until light yellow and creamy
  3. Mix egg yolk and chocolate and stand to cool.
  4. Add cream to chocolate mixture.
  5. Beat egg white with the cream of tartar until stiff.
  6. Stir a third of the egg white into the chocolate mixture, then fold in the rest.
  7. Pour mousse into dessert bowls and refrigerate for a few hours.

Makes 4 portions
