Ingredients

 

For the sponge:

  • 1 cup (175 g) flour
  • 1 cup (225 g) sugar
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) bicarbonate of
    soda
  • 1 egg
  • 2 tbsp (30 ml) apricot jam
  • 1 cup (250 ml) water
  • 1 tbsp (15 ml) vinegar
  • 1 tsp (5 ml) vanilla essence
     

For the sauce:

  • 125 g butter
  • ½ cup (100 g) brown sugar
  • ½ cup (125 ml) milk
 

Method

 
  1. Preheat the oven to 180°C and grease a baking dish*.
  2. Mix all the dry sponge ingredients, add the egg, jam and liquids and combine in a food processor for 3 minutes to form a smooth batter.
  3. Pour the mixture into the greased baking dish and bake for 40 minutes or until a skewer comes out clean.
  4. For the sauce, combine the butter, sugar and milk in a saucepan and boil for 2 minutes.
  5. Prick the still hot sponge and pour the sauce over the pudding.
    Allow to soak for 30 minutes before serving warm with custard.
  6. The best custard recipe is this one: Vanillesoße!

6-8 Portions 

* Remark: A 21 cm diameter pie dish is the right size for the sponge, but there is no space for the sauce; use a deeper dish so that the sponge can absorb the sauce. A Pyrex 20x20 cm dish (2 or 3 quart) works well.
