Chocolate lava cup
(Le moëlleux au chocolat)

Ingredients

 
  • 180 g dark chocolate
  • 180 g butter
  • 3 large eggs
  • 2 large egg yolks
  • 120 g sugar
  • 100 g cake flour
  • 6 blocks white chocolate 
 

Method

 
  1. Preheat the oven to 200°C.
  2. Butter 6 medium-sized ramekins or cups (± 200 ml) and coat with flour; shake out excess flour.
  3. Melt the chocolate and butter in a double boiler or in a microwave at half power, stirring constantly.
  4. Beat the eggs, egg yolks and sugar until pale and creamy.
  5. Gradully add the egg mixture to the melted chocolate mixture; mix well.
  6. Slowly add the flour, a tablespoon at a time, stirring until smooth.
  7. Pour mixture into cups - about three-quarters full.
    (Note: you can prepare the batter in advance and refrigerate it in the molds to bake it later.)
  8. Place 1 block of white chocolate in each pot and bake until crisp on top, but still gooey inside - about 12-18 minutes.
  9. Serve hot.
    Optional: sprinkle with icing sugar or serve with whipped cream or ice cream or strawberries or vanilla custard.
