Filled Muffins

("Kolwyntjies" in Afrikaans)

Ingredients

  • 200 ml milk
  • 2 large eggs
  • 60 ml oil or melted butter
  • 1 cup (??? g) flour
  • 10 ml baking powder
  • 2 ml salt*
     
  • Filling of your choice: mince, spinach and feta, fruit, jam, etc.

Method

  1. Beat the eggs and milk and gradually add the oil.
  2. Sift the flour, baking powder and salt and add to the egg mixture. Mix well.
  3. Drop spoonfuls of dough into a greased muffin pan, add the filling and top with a bit of dough.
  4. Sprinkle with paprika or cinnamon and bake at 180° C until golden.

* add more salt to the dough for a savoury filling if you prefer.

 

Makes 12 medium sized muffins.
