Date Squares

Cookies

Ingredients

 
  • 100 g (125 ml) low fat margarine
  • 150 g dates, roughly chopped
  • 1 x 410 g can butter beans, blended with liquid
  • 20 ml vanilla essence
  • 2-5 ml rum or almond essence
  • 120 g nuts, chopped
  • 500 ml high-fibre cereal
  • 45 ml cocoa powder
  • 125 ml soft brown sugar
  • 100 g chocolate (milk or dark chocolate, as you prefer)
 

Method

 
  1. Place the margarine and dates in a saucepan and gently heat until the margarine has melted.
  2. Add the pureed butter beans and stir, breaking up the dates with a wooden spoon, to make a fairly smooth mixture.
  3. Add the vanilla, rum essence and chopped nuts; boil for 2 minutes, stirring to mix well.
  4. Add the cocoa powder and sugar to the mixture, mix and then add the cereal. Mix well.
  5. Press the mixture (± 1½ cm thick) into a greased square or rectangular container.
  6. Carefully melt the chocolate and spread smoothly over the date mixture.
  7. Place the container in the fridge to set the mixture.
  8. Cut into 3 cm squares when the mixture has set, and store in an airtight container.
