Crunchies

Cookies

Ingredients

  • 180 g butter
  • 30 ml golden syrup
  • 5 ml bicarbonate of soda
  • 125 g flour
  • 180 g oatmeal
  • 250 g sugar
  • 80 g coconut

Method

  1. Pre-heat oven to 160° C.
  2. Heat together the butter and syrup. When the mixture boils, add the bicarbonate of soda.
  3. Sieve the flour into a large bowl, and mix in the oatmeal, sugar and coconut.
  4. Add the butter mixture and mix with hands.
  5. Press the mixture evenly into a greased Swiss roll tin, 38 cm x 25 cm, and bake for 15 minutes. Allow it to cool for 3 minutes and then cut into squares.
  6. Leave the crunchies for another 10 minutes, then remove from the pan and allow to cool completely on a wire rack.

Variation: Add 250 ml chopped nuts to the dry ingredients.
