Mutter Muhl's Apple cake

  Ingredients
Cakes
  • 3 eggs
  • 3 tablespoons (50 ml) flour
  • 3 tablespoons (50 ml) sugar
  • 1 teaspoon (5 ml) backing powder
  • 1 small tin pie apples, cut into cm cubes
  • 1 pinch of salt
  • a bit of butter, cut into small cubes
     
Method
  1. Sieve together the flour, backing powder and salt.
  2. Beat the eggs and sugar until smooth and creamy.
  3. Add to the flour mixture and mix well.
  4. Add the pie apples and stir.
  5. Pour doug into a greased glas pie dish and dot with butter flakes.
  6. Place into oven at 200 °C, reduce temperature to 180 °C and bake for 30-45 minutes.
  7. Serve with whipped cream.
     
Serves 6-8

'Mutter Muhl' baked this apple cake for my mother, Irene, and her sister Herta when they visited her on the island Pellworm in 1962.
