Banana Loaf Cake

Ingredients

  • ˝ cup butter
  • 5 ml vanilla
  • 330 ml brown sugar
  • 2 eggs
  • 500 ml flour
  • 5 ml baking powder
  • 2˝ml salt
  • 5 ml bicarbonate of soda
  • 60 ml sour milk
  • 250 ml ripe banana pulp
  • 125 ml (100 g) coarsely chopped walnuts or pecan nuts
     

Method

  1. Cream butter and sugar. Add eggs one at a time, then dry ingredients alternating with bicarbonate of soda dissolved in milk and banana pulp. (Add 2˝ ml vinegar to milk to make it sour.)
  2. Mix until smooth. Stir in chopped nuts.
  3. Bake for 60 minutes at 180°C in loaf pan lined with with baking paper.
  4. Serve spread with butter.
