Buttermilk bran muffins

Ingredients

  • 50 g (250 ml) digestive bran (wheat bran)
  • 80 g (125 ml pressed down) oat bran
  • 250 ml low-fat buttermilk
  • 1 egg
  • 100 g (125 ml) soft brown sugar
  • 30 ml oil
  • 5 ml vanilla essence
  • 100 g (125 ml) raisins, sultanas or low GI dried fruit, chopped
  • 50 g pecan nuts, chopped (optional)
  • 120 g (190 ml) flour
  • 5 ml baking powder
  • 5 ml bicarbonate of soda
  • 1 ml salt
  • 1 apple, grated

Method

  1. Grease a muffin pan with 12 hollows.
  2. Preheat the oven to 180 °C.
  3. Mix the digestive bran, oat bran and buttermilk together, and set aside.
  4. Beat the egg, sugar, oil and vanilla essence together.
  5. Add the bran mixture to the egg mixture, then add the raisins, sultanas or dried fruit and the pecan nuts.
  6. Sift the flour, baking powder, bicarbonate of soda and salt together, and fold the flour mixture and the grated apple into the batter.
  7. Spoon the batter into the greased muffin pan.
  8. Bake for 10 minutes, then increase the heat to 200 °C and bake for 5 minutes.
     

Makes 12 muffins.
