Ingredients

  • 250 ml cake flour
  • 2 ml salt
  • 5 ml baking powder
  • 250 ml whole-wheat flour, e.g. Nutty Wheat
  • 250 ml high-fibre cereal*
  • 250 ml lower GI oats*
  • 125 ml pecan nuts, chopped
  • 60 ml sunflower seeds
  • 5 ml bicarbonate of soda
  • 500 ml low-fat plain or fruit yoghurt*

Method

  1. Preheat the oven to 180 °C.
  2. Sift the cake flour, salt and baking powder into a bowl.
  3. Stir in the whole-wheat flour, the cereal, oats, pecan nuts and sunflower seeds.
  4. Add the bicarbonate of soda to the yoghurt and set aside for a couple of minutes or until it foams lightly. Stir into the dry ingredients.
  5. Spoon into a 30 cm long bread pan that has been sprayed with nonstick spray.
  6. Bake for about 1 hour, or until the loaf recedes from the sides of the pan.
  7. Tip the loaf out of the pan and leave to cool before slicing.

This bread can also be made in a cast iron pot over an open fire.
 

Makes 1 loaf.
