Cheese & Nut Loaf

Ingredients

  • 500 ml (300 g) flour
  • 10 ml baking powder
  • 5 ml salt
  • 5 ml dry mustard
  • ½ ml pepper
  • ½ cup (± 65 g) butter or margarine
  • 250 ml (100 g) grated cheddar cheese
  • 125 ml (50-75 g) chopped nuts (walnuts or pecan nuts)
  • 2 eggs
  • 250 ml milk

Method

  1. Sift the dry ingredients into a large bowl.
  2. Rub in the butter until the mixture is crumbly.
  3. Add the cheese and nuts, mix well.
  4. Beat the eggs, then add the milk and beat some more.
  5. Add the egg and milk mixture to the dry flour and blend well.
  6. Bake in a 22x12x7 cm pan at 200°C for 40 - 50 minutes.
  7. Cool in pan for 10 minutes before turning out onto cooling rack.

Serve with butter and grated cheese.
 

Makes 1 loaf.
